I am deep into chef & instructor training. Since this is the 3rd module, designed for us to be certified as Associate Chefs & Instructors, the pace has picked up quite a bit. Classes are starting earlier and ending later, with less breaks than before - so condensed in fact, that many participants are getting tired and grumpy - how about that! I am actually getting quite tired on my feet as well, but the information is all so fascinating and I have such a deep desire to absorb everything that I am still enjoying the class thoroughly.
In this module we are being trained in 2 major aspects - 1 is in a high level of culinary skill, and the other is in culinary instruction. They are 2 very different skills! You could say that while culinary skill is a fine art, instruction is more of a science in organization. The great thing is that we are being taught very comprehensively, even down to methods for organizing our filing and schedules, so much so that even a hair brain like me can become confident in organizing a class.
One of the highlights for us is our individual demonstration next week - each of us will be teaching the rest of the class a particular dish, just like the cooking shows on TV! There are hours of preparation behind each demonstration, and it gets us quite enthused about the opportunity to stage a performance. I will be teaching the class how to make Spinach Mushroom Quiche, and it is a dish that's generating a lot of excitement.
In the chef training, I am so impressed by the recipes that we are learning to make. Just about everything we've been learning has been taken to a new level of sophistication. It now dawns upon me that this really is a school of culinary arts rather than just a raw food school. Today Cherie demonstrated a linguine in a truffle cream sauce. The dish was completely raw, but the flavours were so outstanding that it was probably the best tasting pasta dish (cooked food included) that I'd ever had. Can one imagine that I now have the recipes and the know-how to make stuff like that as well? I can't! Woo hoo!

Day 7 @ Living Light
Chef training is going well, although I've been feeling somewhat disconnected today - I'm not sure why. Nevertheless, it was an interesting day - Cherie got 2 of us to help her with a class demonstration, so I got to make something up in front of class. We added a twist of humour by mimicking Cherie's *every* move - it was quite funny. We made Vanilla Cherry Cheesecake - and it was amazing! Cherie has such a gift for manipulating raw textures. Today I found out she has the same birthday as my mum that she's not used soap or shampoo to bathe for the past decade. Isn't the raw food world interesting?

Day 4

The founder of the school, Cherie Soria, returned to teach us today. She has been in Florida with her husband Dan (the GM of Living Light) at the Hippocrates Health institute attending a raw food summit. Cherie is turning 60 in 2 weeks, and we (the students staying until then) will be catering her birthday party lunch! Cherie is stunningly beautiful. She has a figure of a young pop star, long curly black/gray hair, and a gorgeous face. Her skin and her eyes radiate like a studio camera effect - it is ridiculous. She has a humble, loving and sharing energy that is wonderful to receive, and she will be teaching us from now on!

This is her picture from the website, which looks just -okay-. In person she looks like the kind of woman that teenage boys have crushes on.
Today we had tasting class all morning. We were given trays of little "flavour" cups (e.g. garlic, lime, tamarind...) and spent all morning experimenting with how different flavours combined together. I find this a little challenging - it is all awakening a very new awareness in my mouth.
After that we made a delicious Caesar salad sauce that you would've loved mummy, because it tastes like a Japanese sauce using a lot of miso flavour and horseradish. We had that (Caesar salad) for lunch, with yummy croutons made from almond pulp. Later we also made apple pie, followed by some raw pasta dishes (pesto & marinara). These are dishes that I've made before but I'm learning new ways and techniques to create better, more conscious versions! And these are REALLY GOOD YUMMY VERSIONS! *slurp* The wonderful thing is that, they are even healthier and easier to digest than the ones that I've learnt in the past, just by using more intelligently combined ingredients and by using techniques like fermentation and dehydration.

Day 3 @ Living Light

Yesterday was the end of the first module of the course, "fundamentals". Today was the start of "essentials", which is an intensively hands on course that will carry through the next 4 days. Aprons on, hats on, knives out! The schedule runs very tight from 8 am to 6.30 pm everyday, and at times it can get quite stressful for my leisurely brain to work at such speed - but that hasn't stopped me from having a wonderful time. Today was our first real theory class on organizing a kitchen and general knife rules. We made sprouted buckwheat granola, sauerkraut, and almond cheese. We've actually been eating these things everyday since we got here, and they are ALL favourites with us because they taste so good. Today we got to make them! We were also assigned a batch of sprouts each which we have to take personal care of over the next few days (or weeks) depending what sprout we got. We carry them around in a jar. I got an easy one - clover. In the later part of the morning, we made garden blend soup, pizza crackers and black forest cherry brownies. All these things that we made became our meals or snacks at various points throughout the day. Now, these items are not raw foods which I have been excited about in the past, but I tell you, EVERYTHING we made today was so delicious, it really blew me away!
Finally time for lunch! Lunch was a massive salad spread with our garden soup. This doesn't sound delicious but the kitchen here has a way of making it delightful. The soup was what we made in class, and I really don't like these raw soups usually, but today's was SO GOOD. At every lunch, there is a sweet touch - we all hold hands around the buffet spread and feast our eyes on it. We say a big family prayer together and celebrate EVERYTHING! And then we eat. No doubt, this is a fully fledged woo woo school.
The afternoon was spent on learning to use our knives, practicing good knife etiquette and also learning the techniques of cutting various fruits & veggies. All the stuff we were cutting/dicing/juliening/chiffonading eventually went into our own sushi rolls, which we would then eat later in something Gastronomy Lab, which marks the end of each day. During this time, we are quiet and reverent with the food that we've just made, and eat our food with deep consciousness and intensity, paying really close attention to what we are tasting - the 5 different tastes, the effects of the textures, the effect of each different vegetable in the roll, where the different tastes occur in the mouth... it was so overwhelming that I could not begin to think of how I'd balance the food better, because I was just taken aback by how much was going on in my mouth as I consciously chewed and tasted my food. New dimensions indeed.

Day 2 @ Living Light

Being at Living Light has been an incredible experience - and its only day 2 (the last day of FUNdamentals). So much has been happening, and so fast. People's lives have been unfolding in front of me, rich with experiences and diversity. All I can do is listen, ears and eyes wide open.
Tonight, Isaac and Mary brought Kelly, Evana, the other Isaac and Mary and myself to a beach spot behind some dunes, a spot probably only the local boys of Fort Bragg know. Isaac is local - he's the AV coordinator for Living Light - he built a huge bonfire in about 2 minutes flat!

Day 1 @ Living Light

Today's class was fantastic! Even I can't believe how good the food is!

Today's classes were mostly on sprouting, juicing and fermentation - Living Light considers sprouting and fermentation to be the pillars of the raw food diet, and after eating today's foods I can see why! I had my first taste of Rejuvelac and herbed almond cheese - absolutely delicious! It tasted nothing as I'd imagined, a beautifully smooth, mild tasting cheese, alot like buffala mozzarella. The foods were unbelievably good! SERIOUSLY!!! They stuffed us with food today, continuously loading us with snacks and sample portions, in addition to sprouted buckwheat granola & almond milk breakfast and an incredibly tasty salad spread for lunch. I mean, I've already been a raw food convert and I still can't believe how delicious today's food was. And I find I don't have to eat as much to be satisfied! I think fermentation really adds a dimension of raw food that's very necessary that's been missing from my life thus far. And its easy!!! I already can't wait to come back and start setting up what I've learnt today.
The instructors are great - you can really tune into each one and feel how much love and passion they have for what they're doing. Some of them can really talk for forever, but they have so much ENERGY, it is infectious.

No more gym
Yesterday's gym session was particularly depressing because it seems that I've grown weaker! Getting on the scale today reveals that I have lost more weight and in fact, I'm lighter than I've ever been at 62.4 kg. What the heck?
No doubt I've only been working out for 3 weeks, but I didn't expect to LOSE weight!
Taking a step back, I don't think the gym is a form of exercise that works for me though - lifting heavy weights really drains me and the result is that I'm more sedentary at every other time. I'm going to go back to what used to work - running, biking, blading, swimming and yoga.
No doubt I've only been working out for 3 weeks, but I didn't expect to LOSE weight!

Smiling
I am pleased to write that my overeating seems to have ceased. I'm still eating large quantities, but by no means am I stuffing myself late into the night the way I was doing. I'm guessing this can be attributed to 2 things:
1. The parasite or kidney cleansing herbs? Perhaps the parasites in my body are no longer eating so much of my food and hence I am not always craving food.
2. Information from the Bhagavad Gita. According to Krishna, the only desire for one seeking the path of enlightenment is the desire for Self realization. Desire for food belongs to this worldly realm of the unreal, and so it is neither a worthwhile desire nor is it a duty to my body to feed it when its is not even hungry.
When I've been getting the munchies, or if I'm hungry and impatient to get home to eat, I say to myself, "The hunger I experience is a hunger for God within."
This seems to have kept my overeating under control! :)
On another note, I am perplexed by the difference between the spiritual traditions, so to speak. I guess I have my fingers dipped in 3 of them - the Indian, Western and New Age traditions (if there IS a new age tradition!) I can see how the Indian & Western traditions come very much to the same path, even if they adopt different approaches, but the information given by Kryon in the New Age approach can really make me wonder.
I guess the main difference is that in the New Age there is so much self-empowerment to take. It feels fantastic when I do it by giving intent and verbalizing, but when I cross other traditions, such as when reading the Bhagavad Gita or when exploring the Clairvision information, I feel a little obnoxious claiming such power for myself.
Yet, I resonate most closely with the Kryon information. I feel the most love and compassion as I read it, and I guess, as Kryon says, THINGS HAVE CHANGED ON OUR PLANET OF FREE WILL! :D
Still, it surprises me that there can be such a difference between the teachings existing at the same time on earth, vis a vis a walking avatar, Sri Sathya Sai Baba, and a live channel of Kryon.

Energy levels have run real low and poop has gone all squishy into day 4 of Dr Hulda Clark's parasite & kidney cleansing program. There's a lot to follow- a potion to drink throughout the day and different pills to be swallowed at breakfast, lunch and dinner.
I went to Zen Xin organic supermarket today - its at the Pasir Panjang wholesale center, right opposite the Kopitiam. Its 3 weeks since opening. I must say its the first place I've come across that'll give Nature's Glory a real run for their money - prices are about the same but the store is bigger & brighter with a seemingly wider range of organic vegetables. They also have more "local" vegetables than Nature's Glory. Nature's Glory is still a kick ass shop though - if you haven't visited it, check it out at Tan Boon Liat Building on Outram road.

Dr Hulda Clark's Parasite & Kidney Cleanses

Yummy Thali
I was in Puttaparthi to see Swami for several days, and my fruit & vegetable (plentiful) diet soon caved in to delicious South Indian Thalis on the menu, and the occasional yummy prasad that was given out some days. My skin is in breakout mode now.
I am trying to cut down on the fat... my fat intake has been up around 50% of my (raw) daily calories. I haven't been finding it easy, but perhaps if I start using more lettuce/broccoli/carrots/cucumbers instead of flax crackers to eat dips with, this should help greatly.
The workout has been going on schedule, and the muscles have stopped aching so severely now (Thanks! It was ridiculous hobbling around after last week's leg workout)
Read through Kryon Book VII (twice!) since being in Puttaparthi. I love, love, love Kryon.

Packing more calories
I've started trying to put on some weight using Jonathan Perez's guide "From skinny to muscular" - which Fred Patenaude recommends in "Raw Secrets". The philosophy is basically to lift heavy weights (working muscles to the point of failure by 12 reps) and to eat huge amounts of food - at least 4,000 calories for someone like me.
I started with my training schedule on Monday, and yesterday I started trying to pack in the calories - I managed a whopping 4,900 calories, and I was exhausted last night, still exhausted now. My digestion is not working from eating so much. This is where my calories came from - not all raw (Mexican dinner, vegetarian at least, at Margarita's. Very yum though!)

Anyway, this morning I decided that I couldn't keep up with this kind of eating. Yesterday I dedicated 75% of my energy to eating and calculating calories... I was really eating non stop, and its difficult to keep up. Last night I felt sick. Today I feel sick. My face is bloated and my right eye is even smaller than usual. No way!
So I'm going back to eating as intuitively as possible, following just Jonathan's training schedule without the his nutritional recommendations. Let's see where it goes!
I started with my training schedule on Monday, and yesterday I started trying to pack in the calories - I managed a whopping 4,900 calories, and I was exhausted last night, still exhausted now. My digestion is not working from eating so much. This is where my calories came from - not all raw (Mexican dinner, vegetarian at least, at Margarita's. Very yum though!)

Day 30
Today I celebrated a whole month of pure rawness :D
And what did I do? I ate some cooked food of course :P
In previous months when I had my weekly un-raw day, I would go crazy, eating stuff like pizza, sirloin steak, ice cream - and to add insult to injury - just cramming the stuff down like a glutton's last day on earth.
Today however, I had my usual garden green salad at Yogi Hub, along with their delicious broccoli soup and a few slices of steamed pumpkin. Hmm... very satisfying.
Upon getting home I still had room for a few more oh-so-sweet black halvah balls! And then more for some macadamias and cashews. Ho ho.
And what did I do? I ate some cooked food of course :P

Day 28
Tummy's still kind of upset so I'm eating simpler - papayas are really nice right now and I'm been living on them mainly. Real sweet with a fragrant vanilla scent.
I started reading Jonathan Perez's ebook "From skinny to muscular", as recommended by Frederic Patenaude. His workout schedule looks great, and I think I'll use it - but as for diet & nutrition... hmm... I look the other way.
Its day 28 - almost 1 month of pure raw!

Day 26
Gosh, if I look at everything I've eaten today:
1 mango
Smoothie consisting of 2 oranges, 1 mango, 2 bok choys, bunch of parsley and 1 cucumber
A huge salad with tamari/lemon dressing
Slice of date nut torte
2 pieces of papaya
A tray of Igor's flax bread
Zuchini pasta w marinara sauce
A whole bowl of zuchini hummus (this is quite delicious)
I overate so badly. Can't move.

Day 22
Today I made sprouted chick pea hummus from Alissa's book. On its own, I didn't like the hummus so much. I'd use less lemon and salt than the recipe recommends, and probably add in a clove or 2 of garlic as well!
HOWEVER, when I tried the hummus with Igor's flat bread - MY GOD. It was SO good.
I ate alot of jicama today - we call is bang kwang here in Singapore. I bought a real whopper from Cold Storage this morning. I turned half of it into "rice" using the raw food real world sushi rice recipe, and the other half into Alissa's spicy fries - which are really really odd. They look like soggy McDees but they really don't taste ANYTHING like fries... I don't know what I was thinking. The recipe should've said it all - apple cider vinegar and honey? Hmm.

Day 21
Both my sinuses are blocked this morning!
Ran 20 mins, jogged remaining 10 mins.
Tried Alissa's Banana-Papaya pudding - not bad but I prefer a papaya on its own when they're as good as they are now!
Finished off the Banana Butter Berry Pie. Yum :)
Tried to make "Tuna Phish" sushi rolls from Gabrielle Chavez's book but didn't like how they turned out. And realized I was using toasted nori - oops - heh heh.
I have to talk Nature's Glory into sourcing untoasted nori... and raw almond butter!
I made Gabrielle's Black Halvah balls for dessert, using agave & stevia instead of honey. YUMMMY!!! -> Highly recommended.

Day 19
I woke up a little shaky... my feet still hurt and I still feel feverish. I could only manage 15 minutes of meditation this morning, the environment and especially the nearby road noise and construction really disturb me - I have to wake up earlier to meditate.

Had a great ISIS this morning with Ceri! I'm finally back on track with the meditation.
Have been feeling a little funny since afternoon... I ate a TON of flax crackers and now the soles of my feet have started to hurt with a little visible swelling on the tops of my feet.
I'm starting to feel a little feverish as well.

Day 12
Well, skin still greasy and lots of little stuff growing on it. heh heh.
Pooping frequency is down to once a day and I think its due to the massive amounts of delicious flax bread that I've been eating. Igor's live flat bread recipe... its delicious.
Breakfast smoothie was good today. It had
2 Thai mangoes
1 frozen banana
2 stalks celery
2 bunches kai lan
2 Tbsp sesame seed

Day 8
I've been getting my dizzy spells more intensely than usual. I've also not been exercising as vigorously as I used to (because of the broken hand). The last time I felt such strong dizzy spells was probably at Hilary's when I was water fasting in Ko Samui... My mum, a mainstream doctor, says its hypoglycemia. From what I've read in natural health, they describe it as part of the detox process. Sticking with the natural camp on this one, for now, of course.

Day 7
I can definitely feel something happening in my body, though I don't know what exactly.
Cravings are starting to go away. 2 nights ago I was at my mum's for dinner (I made a smoothie) - but the others were having lap chiong fan - an old favourite. It was quite easy not to eat it though.
Made Alissa's raw marinara today. It was SO DAMN GOOD. I made it a little differently from the book - I used dried parsley instead of fresh parsley because Kim abhors parsley. Also, after the marinara was made, I blended another 3 tomatoes separately and stirred those into the mix instead - gave a more watery, fresher texture to the marinara, I thought.
I made zucchini pasta, and I had the pasta in the dehydrator for about an hour to let the excess water dry - nice result! The final spaghetti in marinara sauce was the best I'd ever made... I can still taste it. Hmm... now if I'd just made some RAW MEAT BALLS! Pity the suckers take 200 hours to dry or something.
I ate a whole pint of coconut ice cream for dessert, which I savoured over the ending of Lady in the Water, and went to bed right after. That can't have been good.

Day 6
Not feeling so good today - might be the cups of dried fruit & nut I chowed down last night, or the de-alcoholized wine Ambrose brought over, of the difficulty in sleeping with my broke hand - or maybe just everything!
Kim's smoothie for breakfast! Funny, she likes a salty smoothie instead. It had celery, tomatoes, carrot & lemon juice. It made me really happy to see my partner making today's smoothie when she was always icked out by my blended drinks before. Woo hoO!
My da jie just brought home a 9-tray Excalibur from Vancouver and she's parked it with me, with the task of providing her with some raw munchies. I started with flax crackers and the vinegared raw potato chips (Alissa's recipes). Potato chips are so-so but the flax crackers are delicious, and have been a hit with everyone that's tried them!
I also made the Pumpkin Pie from Alissa's book - kick ass!!!

Day 5
I broke my left hand this time.
At the hospital, I asked for the nurse to have a look at my records to see when it was that I had broke my right hand before - June 2005.
I spent some time wallowing in self-disappointment over the repeat circumstance - losing to the flames and smashing a limb into a hard object - but I'm busy looking for my lesson now. For a while, it felt as if I'd made no progress with my self-improvement process... but now I know its not true. I have!
Kim made my breakfast smoothie today, the sweetie :)

Day 4
Today I decide to have faith that living foods will take care of my hair loss. I no longer use Minoxidil / Regaine / Growell on my scalp.
I had lunch at Yogi Hub where Lily made me a very refreshing 100% raw salad and also a raw nato sushi roll, which among other greens & sprouts, contained fermented black bean sprouts - delicious! My dad (not raw) didn't think it was as tasty, but his taste buds are probably accustomed to saltier foods.

Day 3
I feel shitty today. My mind is foggy and my stomach is uncomfortable. I don't know if it was from eating too much yesterday or if I'm detoxing all the rubbish I ate over the last 3 weeks. I had so many nasty dreams - of visiting the house where I grew up in a dilapidated state, of being bitten by a little dog, worst of all of eating cooked food - eating lumps of baked meat and coin-sized pizzas with Kim. I'm tired.. just thinking about yesterday's fettu alfredo makes me sick.
Today I start reading John Robbins - The Food Revolution.
Today's breakfast smoothie:
1/4 watermelon
1/2 a fuji apple (Kim's leftover)
1 grapefruit
3 big stalks of celery
Yummiest celery smoothie I've ever had - I highly recommend! You could probably leave out the apple without consequence.
Finished off the day with ice cream. This time I put 10 cubes of coconut ice cream with a big dash of maple syrup (yes, I know, not exactly raw). The ice cream tasted great - even Kim liked it - much like Gula Melaka. Hmm maybe I can make a raw chendol.

Day 2
I tried Alissa's Fettuccine Alfredo recipe today. I was chuckling to myself as I innocently blended *3* whole cups of nuts (I used cashew, pine & brazil). Fred -low fat- Patenaude and Alissa -whatever it takes to stay raw- Cohen have very different approaches heh heh. I couldn't handle my cooked food cravings with Fred's approach so this time around we'll go with eating lots of fat if necessary to stay raw.
Anyway, after chomping through about half of my Alfredo (zucchini & local pumpkin for pasta), I just couldn't stomach another bite.
Much later in the night I made a whopping third of a vitamix of dessert - 6 cubes of coconut ice cream (raw food/real world recipe), 2 frozen bananas, juice of a lemon and a tbsp of honey. I enjoyed it very much!

Day 1
First, let me bridge the big gap from the last entry. Ashamedly, I haven't been raw much for the past 3 weeks. I was doing really well, and then I fell off the bandwagon. With Kim's parents visiting, a trip to Vietnam, and then camping in the NUH ward to keep Kim company, the only resemblance left of a raw diet was my morning smoothie and of course, raw desserts.
I've been doing A LOT of emotional overeating.
But now here we go, here we go. I've just started reading Alissa Cohen's book and its perky attitude has got me jump started. I've got my journal, my list of goals, my growing list of activities I love, and a commitment to at least 30 days of 100% raw. This is not going to be easy with Chinese New Year around the corner... but there's never been a better time than now! :)
So today is Day 1. Starting from scratch now!

But now here we go, here we go. I've just started reading Alissa Cohen's book and its perky attitude has got me jump started. I've got my journal, my list of goals, my growing list of activities I love, and a commitment to at least 30 days of 100% raw. This is not going to be easy with Chinese New Year around the corner... but there's never been a better time than now! :)
